

Organic 100% Edamame Noodles – Ramen Style

Ingredients:
- 175g chicken breast meat (sliced)
- 750ml chicken stock
- 1 tbsp minced garlic for stock, 1 tsp for chicken breast meat
- 2 tbsp vegetable oil for stock, 1 tbsp for chicken breast meat
- 2 tsp minced ginger
- 2 tbsp soy sauce
- 1 chili pepper
- 8 ears of baby corn
- 4 hard-boiled eggs (halved)
- ground black pepper
- sea salt
- 100g Organic 100% Edamame Noodles from The Un-Possible KitchenTM
How to Make:
1 | Season the sliced chicken breast with a mix of minced garlic, vegetable oil, sea salt, and ground black pepper (to taste) |
2 | Grill the chicken breast in the oven at 180°C for 20 minutes or until fully cooked. Remove from the oven and cover with foil until ready to serve. |
3 | Heat 2 tbsp of vegetable oil in a saucepan. Add the minced garlic and ginger and cook for a few minutes until softened. Add the soy sauce, sauté for a few seconds and then add the stock. Bring to a boil. |
4 | Cook the baby corn for 4-5 minutes in salted boiling water. |
5 | Cook Organic 100% Edamame Noodles from The Un-Possible KitchenTMin salted boiling water for 3 to 5 minutes. Rinse in cold water and drain, if desired. |
6 | Assemble the ramen bowls: pour cooked stock into the bowl, place cooked noodles into the stock, add sliced chicken breast, halved hard-boiled eggs, chopped chili pepper (or scallions) and baby corn. |
