

Organic 100% Black Bean Spaghetti with Coconut Sauce and Peppers (Vegan)

Ingredients:
- 400ml can of coconut milk
- 100ml water
- 1 tsp sea salt
- 4 tsp tapioca starch
- 2 cloves of garlic (minced)
- 1 large bell pepper (deseeded and sliced)
- 2 tsp olive oil
- 100g of Organic 100% Black Bean Spaghetti from The Un-Possible KitchenTM
How to Make:
1 | Rub olive oil on sliced bell peppers and grill several minutes per side on an electric grill. |
2 | Pour coconut milk into a saucepan, add water, sea salt, minced garlic, and tapioca starch and heat on medium low. Stir frequently until the mixture starts to boil and thicken. |
3 | Cook Organic 100% Black Bean Spaghetti from The Un-Possible KitchenTM in salted boiling water for 3 to 5 minutes. Rinse in cold water and drain, if desired. |
4 | Add grilled bell peppers into the coconut garlic sauce, toss with cooked spaghetti and serve. |
