Bak Chor Mee” Organic 100% Black Bean Noodle with Minced Pork, Singaporean Style

Ingredients:

  1. Meatballs
    • 200g beef mince
    • 2 tsp soy sauce
    • ¼ tsp white ground pepper
    • 1 tsp cornstarch
    • 1 tsp sesame oil
  2. Sliced Pork
    • 120g sliced pork
    • 1 tsp soy sauce
    • White ground pepper
  3. Broth
    • 1.5 litres water
    • 1 kg chicken wings
    • 1 star anise
    • peppercorns
    • 2 tsp salt
  4. Mushrooms
    • 60 g dried shiitake
    • 500ml hot water
    • 2 tbsp soy sauce
    • 1 tbsp fish sauce
    • 1 tsp sugar
    • 1 tsp vinegar
  5. Leek
    • 4 leeks
    • 1 tbsp vegetable oil
    • Sea Salt
  6. Sauce for noodles
    • 2 tsp sambal
    • 2 tsp light soy sauce
    • 2 tsp fish sauce
    • 4 tbsp stewed mushroom liquid
    • 2 tsp Chinese black vinegar
    • 4 tbsp hot broth
  7. Garnishing
    • Lettuce and Sambal sauce
  8. 100g Organic 100% Black Bean Noodles from The Un-Possible KitchenTM

How to Make:

 

1 The day before: Soak dried shiitake mushrooms in a large bowl of hot water to soften, refrigerate overnight when cooled. Marinate the minced beef with soy sauce, white ground pepper, corn starch, sesame oil and refrigerate overnight. Marinate the sliced pork with soy sauce and white ground pepper and refrigerate overnight.
2 Day of preparation: Add chicken wings, peppercorns, salt, and star anise into 1.5 litres of water. Bring it to boil and simmer for an hour. (Broth)
3 Shape minced meat into balls and cook them in the simmering broth.
4 Cook sliced pork the same way.
5 Add mushrooms (including the liquid from soaked mushrooms) from the day before, dark soy sauce, fish sauce, vinegar, and sugar into a saucepan. Bring to a boil, then lower the heat and simmer for 1 hour. (Stewed mushroom liquid)
6 Slice the leeks into half, lengthwise and roast them in oil for 2-3 minutes.
7 Cook 100g Organic 100% Black Bean Noodles from The Un-Possible KitchenTM in salted boiling water for 3 to 5 minutes. Rinse in cold water and drain, if desired.

Prepare the noodle sauce using 2 tsp sambal, 2 tsp light soy sauce, 2 tsp fish sauce, 4 tbsp stewed mushroom liquid, 2 tsp Chinese black vinegar and 4 tbsp of broth, mix and toss together with noodles.

Serve cooked noodles with meatballs, sliced pork, mushrooms, leeks and fresh lettuce together and flavoured broth and sambal sauce on the side
